At the highest point of the island's Jumeirah outpost, Es Fanals is where to sample Spanish fine-dining at its best. Named after the lanterns that Spanish fisherman would attach to their boats, it serves tapas that is as heavenly to look at as it is to taste. Along with classics such as pimientos de padrón (in a flower pot), more creative dishes such as silky goat's cheese foam with crunchy green-apple salad, spicy salmon tartare on a bed of avocado, and lamb fillet with garlicky chanterelles are also on offer. Book early for a seat at the chef's table – not so much a table than two place settings in the kitchen, where you have a front-row seat, watching the chefs cook and chat to you about your dinner.
Honey-coloured, hilltop Deiàhas long attracted artists, musicians and literary sorts, including the poet Robert Graves, who is buried beneath a cypress-tree in the churchyard here. Mallorca is the biggest island in the Balearics and has the stretches of coastline to match. One of the best beaches is Cala Tuent, on the north-west coast, which is reached by a coachload-averting winding road and surrounded by pine forests. The secluded cove is also overlooked by a small chapel.
This mountain range, which runs from the north-east of the island to the south-west, was made a Unesco World Heritage Site in 2011, in recognition of the harmonious agricultural techniques used here for centuries. Hike or cycle the passes, but be sure to stop and admire the various terraces, paths and dry-stone constructions along the steep slopes, created by farmers with considerately light touches.
